Description


Xylitol is a pentahydroxy sugar alcohol (C5H12O5) naturally occurring in fruits and vegetables, with a sweetness comparable to that of sucrose. It is widely used as a non-cariogenic, insulin-independent sweetener in dental care products and sugar-free foods for individuals with diabetes. In addition, xylitol is an important synthetic building block and a high value-added chemical derived from biomass. Industrially, it is produced either by catalytic hydrogenation of D-xylose or by biological routes involving the microbial reduction of D-xylose by xylose reductase [361].
