Description


Hydroxytyrosol (2-(3,4-dihydroxyphenyl)ethanol) is a potent antioxidant naturally present in olive extracts and associated with various health benefits. It can be synthesized from tyrosol using biocatalysts such as mushroom tyrosinase or whole-cell systems of Halomonas sp. and Pseudomonas aeruginosa [355].
